The footage is taken outside a restaurant at the bus station in Cotacachi. In most places, eating at a bus station would be an act of desperation, but in Cotacachi it’s a delight of local flavors and colors.
Suzan Haskins and her husband Dan Prescher spend their summers in Cotacachi, and some of their favorite lunch spots are the stalls that line the back of the Cotacachi bus terminal, which is right next door to the town’s fresh produce market. The Cotacachi “food court” is managed by the same local business cooperative that manages the adjacent market, and it’s always clean and inviting.
Some of the local treats in the food court stalls include horneados (whole roast pig), ceviches and fish soups in the style of Ecuador’s Pacific coast, roast or stewed chicken, and Suzan’s and Dan’s favorite, carne colorado, pork cutlets rubbed with spices and fried on a hot griddle with llapingachos (potato patties stuffed with cheese). The dish gets its name from the deep red color that comes from one of the special rub spices, achiote.
The only thing better than the taste is the price… big, delicious lunches are so cheap that it actually costs more to cook at home! See Suzan and Dan’s video below for a mouth-watering sample.
