Dolores Hidalgo is Mexico’s “cradle of independence,” since Mexico’s war of independence against Spain began here in 1810. For this reason it’s a big tourist destination among Mexicans. Today Dolores Hidalgo is known for its beautiful ceramic tile—there are many tile factories in the area—and for its ice cream, which comes in every flavor imaginable…including bacon ice cream!
